Well, I officially feel like I’m on summer break- woo hoo! We’ve been trying BBQ (photos coming soon), exploring our neighborhood and meeting new people everywhere we go. It’s great. We’re so excited for what’s to come!
I was supposed to start the day off with a yoga-in-the-park date with a friend, but a thunderstorm rolled in and ruined our plans. We settled for coffee in Parkville (a town very close by) and I’m glad we did. I had a few extra minutes to roam around before coffee, so I snapped some pictures. I definitely want to go back and do some shopping. They had a few antique/decor/clothing shops like The Middle that I’d like to explore at some point.
The friend I met for coffee is from MO, and we actually met 6 years ago in Europe. She’s also a teacher here in KC! We’re excited to reconnect now that we’re both in the same city. Small world. She doesn’t live far from Parkville Coffee and it’s only about 5-10 minutes from our house so it was the perfect fit.
It’s been quite some time since I’ve had the chance to get in the kitchen and make THINGS! I was able to food prep a bit today and it was glorious. I made some roasted veggies (sweet potatoes, broccoli, zucchini) and turkey burgers for lunches. I also made ranch using this recipe. You can’t go wrong with her dressing recipes. They’re so easy and much better for you than store bought stuff.
I also prepped 3 days of Kimberly Snyder’s Glowing Green Smoothie. It’s such a great way to get greens in before you even start your day. Earlier this week I made some watermelon juice and I’ve been sipping on it quite a bit. I toss about 1/2 a cup into my HydroFlask with H20 to jazz up my water. Yum!
Tonight, Kevin and I will head to Urbana KC. I can’t wait to see what it’s all about!
